Buffalo Chicken Mac and Cheese | Slow Cooker Recipe | Easy Chicken Dinner

What to Serve With This Meal?

Our favorite thing to serve with this Buffalo Mac and Cheese is a nice salad.  We love a good salad pack with the premade dressings and toppings from the grocery store, but we have also served oven baked summer squash and zucchini.  

No Ranch Seasoning?

That's ok!  Just grab a few spices and substitute.  We often don't have all the ingredients to even make our own ranch seasoning, so I will just use the following mixture: 

2 Teaspoons Garlic Powder

2 Teaspoons Onion Powder

1 Teaspoon Parsley

1/2 Teaspoon Salt

1/2 Teaspoon Mustard Powder

1/2 Teaspoon Black Pepper

Cooking Instructions and Tips

This recipe is as simple as tossing the chicken breasts into the slow cooker with the seasonings and the buffalo sauce.   We use the Sweet Baby Ray's Buffalo Sauce, but use whatever your favorite sauce is!   Once you have all of this in the slow cooker simply turn it on high and let it cook for around three hours or until the chicken can be easily shredded.   By the time I remember the chicken cooking I can typically easily shred the chicken with two forks.  

Boil 8 ounces of macaroni noodles while you shred the chicken.  Make sure to not cook the noodles all the way as they will finish cooking in the sauce in the slow cooker.  

Once the chicken is shredded, shred the two blocks of cheese.   We used one block of cheddar cheese and one block of mozzarella cheese, but use whatever cheeses you would prefer.  I know shredding blocks of cheese is a pain, but it is worth it to shred your own for macaroni and cheese recipes.  
Pre-shredded cheeses have a coating that tends to leave a bit of a texture in the sauce.  If you only have pre-shredded cheese that is fine!

Once everything is shredded, add the cheese and chicken to the slow cooker with the milk and al dente macaroni noodles and let everything cook for another 30 minutes to an hour.
